Under the supervision of the Assistant Correctional Food Manager, the Supervising Correctional Cook (SCC) oversees and supervises the preparation, cooking and serving of approximately 17,000 meals per day. The Supervising Correctional Cook performs weekly sanitation and safety inspections of all kitchen equipment, instructs incarcerated persons in safe and sanitary use of equipment, orders weekly menu food items and supplies, makes work and vacation schedules, reviews menus and makes changes as required, maintains security of working areas and work materials, and searches incarcerated persons for contraband.
